Meal Plan of the Week: Vegetarian
Mar 13, 2023This week's meal plan of the week is a vegetarian meal plan. Every couple of months I like to switch over to full vegetarian to increase my veg intake.
Why do I do this?
Firstly, it tastes amazing! This plan includes some delicious recipes that will excite your taste buds.
I also like to tap into the health benefits that come with a vegetarian eating pattern. Based on research from the Blue Zones (the areas around the world that have a high population of people living up to 100yrs old), a diet high in plants can reduce your risk of chronic disease and help to increase your chances of living longer. The diet of Blue Zone inhabitants is predominantly plant-based (about 95% plant-based). I try to replicate this on a weekly basis, and every now and then switch completely to vegetarian for a short period.
Despite being on a vegetarian diet, I still managed to consume over 120g of protein each day, and the important thing for me is the nearly 50g of fibre (that's huge).
