The low-carb breads are a fantastic source of fibre and protein and are available at the major supermarkets (typically sold as 85% lower-carb bread).

Here's what you need.
Ingredients:
· 1 Tomato
· 1 Tbsp chopped basil
· 1 tsp of balsamic vinegar
· 2 tsp extra virgin olive oil
· ¼ of a medium avocado
· 1 slice of low-carb, high-protein bread
Method:
1. Dice the tomato and chop the basil leaves. Mix together in a small bowl.
2. Drizzle tomato and basil with olive oil and balsamic vinegar.
3. Toast the bread to your liking, then slice the avocado and layer across the toast. NOTE: Low-carb bread does not brown when toasted like conventional bread.
4. Serve by topping the toast with tomato mixture, and season with salt and pepper to serve if desired.
